What was supposed to be a quick lunch turned into bringing a franchise home to roost.
The Jerome Pizza Factory came to fruition after Con and Lisa Paulos visited one up north. After the encounter they decided to see if Julie Emery wanted on board to become a managing partner.
With years of restaurant management experience under her belt, Emery set off to get the Jerome Pizza Factory up and running at 3230 South Lincoln in Jerome.
Emery took a few moments with the Times-News and responded to a Q&A.
Times-News: How did the Jerome Pizza Factory come to be and when did you open?
Julie Emery: Con and Lisa Paulos took a trip back in 2019 and ate at a Pizza Factory. They liked it so much, they asked if we wanted to start a local franchise. Then COVID hit, putting a hold on getting a restaurant opened up. When 2023 came around and we all started to get the urge to get going on the project again. After a few months of work, we opened on March 27, 2024.

TN: What’s the best part about owning a restaurant?
JE: Getting to interact with the great community of Jerome, making delicious and awesome pizza for people, and being your own boss isn’t too shabby either.
TN: How is owning a franchise different than owning a stand alone restaurant?
JE: Franchises have certain rules to follow, regarding how the business is run, what’s on the menu, and where product is obtained. It also is full of great support, with bigger resources for assistance, as well as a larger community of owners to go to with questions and ideas.
TN: What makes the Pizza Factory stand out?
JE: Fresh made, hand-tossed crust, our quality, and the freshness of our ingredients. Almost everything is handmade, including the salads on our awesome salad bar.
TN: Any upcoming plans for the restaurant?
JE: We will be expanding our dining room in the near future, as well as expanding outdoors with a patio.
TN: Anything you’d like the public to know about the Pizza Factory?
JE: We are locally owned and operated, and once we get a few more things accomplished, we can’t wait to get out and support our awesome community. We deliver to all of Jerome, from the canyon to seven miles north of the city.
